Recently, Mr. Jiang Yuntao from the School of Culinary Arts completed the Train-the-Trainer RCM Advocate Program organized by the California Milk Advisory Board (CMAB) and was certified as a professional lecturer for California cheese application and promotion.

The highly competitive training selected only one participant from each of nine countries and regions worldwide. Participants were mainly Michelin-starred chefs and core teachers from culinary colleges. The curriculum covered classification and sensory evaluation, production processes, grading standards, applications of California cheese in Chinese and Western cuisine, storage and supply chain management. Five rigorous assessments were arranged: written exam, blind tasting identification, practical operation, menu development and comprehensive defense. Ranking first in the overall score, Jiang Yuntao successfully obtained the certification.

As one of America’s leading agricultural marketing boards, CMAB promotes California dairy products globally. It has maintained close cooperation with our School of Culinary Arts. The two parties previously co-hosted special cheese training courses to help faculty strengthen their dual-qualified competencies and broaden their international vision.

The School of Culinary Arts will integrate cutting-edge cheese techniques and culinary concepts into teaching and research, update its curriculum system and optimize talent training plans. It will also actively carry out industry promotion and teacher training, align culinary programs with international standards and industrial development, and contribute to the high-quality, connotative development of the college.
